The Calchaquí Valleys of Northern Argentina are home to the giant Cardon cactus, some of which stand over 10 meters tall and have lived for hundreds of years. Cafayate is famous not only for its high-altitude wines but for these "sentinels of the desert" that dot the dramatic red and golden mountain landscape. It is a land of extremes, where the dry air makes the colors pop with unnatural clarity.
